Healthy Egg Salad

Does anyone else have a ton of eggs left over from egg coloring for Easter!  Well I DO!  I love eating hard boiled eggs, but I needed to do something with the rest of them, so I thought immediately of EGG SALAD!

So I have always LOVED egg salad, but it is usually packed with way too much mayo, making it not so healthy!  Luckily, with my meal plan, I can have a tsp of mayo a day, but there are probably 5 tsp in a serving of egg salad!  So, want to know my trick??  A super ripe avocado!  Check out the recipe below!

1. Peel, wash and dice 12 hard boiled eggs.

2. Add 3 tsps. of mayo (this will give you about 1/4 a tsp per serving)

3. Mash up and stir in 1 ripe avacado (For all of my fixers, this will add about 1/2 of a blue container per serving)

4. Dash with Himalayan Sea Salt and Black Pepper
