Oatmeal Bars

These oatmeal bars are a staple in our home now.  A sweet friend of mine made them for me right after I had our third baby (Lillian).  They are very filling, great for milk production (breastfeeding), and a healthy snack!

RECIPE

Ingredients

2 cups slow cook oats

2.5 tsp cinnamon

1.5 tsp baking powder

1 cup canned coconut milk (any kind of milk will work)

0.5 cup unsweetened applesauce

1 egg

1-2 tbsp honey or agave

1.5 tsp vanilla

0.5 cup cranberries or raisins 

Extras: chia seeds, flax seeds, sunflower seeds, pumpkin seeds

Directions

Preheat oven to 350 F

Combine wet ingredients then add dry and stir well

Lightly grease 8x8 pan or double recipe for 9x13 pan

Bake for 30-35 minutes

Refrigerate after cooling
