Chicken, Chick Pea and Veggie Spring Rolls

Ingredients:

  • 1 pound chicken breast baked with salt and pepper to taste

  • 1 cucumber

  • 1 orange pepper

  • 1/2 a purple onion

  • 1 can chick peas

  • Rice Paper

Instructions:

  1. After chicken is baked, cut it into small cubes.

  2. Add chopped veggies, chicken and chick peas together in a bowl and mix.

  3. Follow instructions on your rice paper pack to make the spring rolls. (note: this chicken mixture would also be amazing over a salad or in a wrap!)

  4. Make a dip to go with! For this I used the Avocado Dressing recipe here…

Ingredients

  • 1 ripe medium avocado, cut into cubes

  • ½ cup 2% Greek yogurt

  • 1 clove finely chopped garlic

  • 1 Tbsp. finely chopped red onion

  • 1 Tbsp. fresh lemon juice

  • 2 Tbsp. fresh parsley sprigs, chopped

Instructions

  1. Place avocado, yogurt, garlic, onion, lemon juice, and parsley in a blender; cover. Blend until smooth.

Serving Size: 1 serving = 3 rolls
