Chicken, Chick Pea and Veggie Spring Rolls
Ingredients:
1 pound chicken breast baked with salt and pepper to taste
1 cucumber
1 orange pepper
1/2 a purple onion
1 can chick peas
Rice Paper
Instructions:
After chicken is baked, cut it into small cubes.
Add chopped veggies, chicken and chick peas together in a bowl and mix.
Follow instructions on your rice paper pack to make the spring rolls. (note: this chicken mixture would also be amazing over a salad or in a wrap!)

Ingredients
1 ripe medium avocado, cut into cubes
½ cup 2% Greek yogurt
1 clove finely chopped garlic
1 Tbsp. finely chopped red onion
1 Tbsp. fresh lemon juice
2 Tbsp. fresh parsley sprigs, chopped
Instructions
Place avocado, yogurt, garlic, onion, lemon juice, and parsley in a blender; cover. Blend until smooth.
Serving Size: 1 serving = 3 rolls
