Pepper and Zucchini Lasagna

This is an amazing no carbohydrate Italian dish!

Ingredients:

5 red peppers cleaned and sliced in half

2 zucchini cut into 3 inch sticks

2 lbs. extra lean ground beef

1 jar Organic Bertolli Pasta Sauce

2 tbsp. Italian Seasoning

1 tsp. Pink Himalayan Salt or Sea Salt

1 Cup Shredded Mozzarella Cheese

Instructions:

  1. Spray a large saute pan with olive oil cooking spray. Add ground beef, Italian Seasoning and Salt. Cook until beef is cooked through.

  2. Add Italian Sauce and let simmer for 20 minutes on low heat.

  3. Preheat oven to 350 degrees.

  4. Spray 9x13 baking dish with olive oil cooking spray.

  5. line pan with peppers (inside face up) and half of the cut up zucchini.

  6. Top peppers with the meat sauce.

  7. Top with the other half of the zucchini.

  8. Sprinkle the top with the mozzarella cheese.

  9. Bake for 45 minutes. You can add or cut back time based on how you like your veggies cooked.

  10. Enjoy!!
