Egg and Quinoa Muffins

These are a great breakfast item and super awesome for energy if you eat them an hour before your workout!

Ingredients (makes 12 Muffins, serving size is 3 muffins)

  • 4 cups of spinach
  • 8 slices of turkey bacon cooked and chopped
  • 4 tsp olive oil
  • 4 eggs
  • 2 cups of cooked quinoa
  • dash of garlic powder
  • dash of pepper

1. Preheat oven to 375 degrees F.

2. Cook quinoa, you will need 1/2 cup cooked per serving (3 muffins). So make 2 cups for a 12 count muffin tray. The rest of the instructions will follow this quantity.

3. Cook 8 slices of turkey bacon, and chop.

4. Wilt 4 cups of spinach in 4 teaspoons of olive oil.

5. Combine eggs, spinach, cooked quinoa, and turkey bacon. I like to add some pepper and garlic powder for added taste. Add any dried herbs you would like, but avoid adding any salt.

6. Spray muffin tins with non-stick spray or use muffin cups.

7. Spoon mixture evenly into the muffin tins.

8. Bake for 20 minutes
