Ground Beef, Napa Cabbage & Carrot Stir Fry

I made this tonight and just had to share, it was definitely a winner in my husbands book! I love new healthy recipes that are simple and do not have too many ingredients, this one hit the spot!

Ingredients

  • 2 cups matchstick carrots

  • 2 cloves of garlic chopped

  • 1 small bunch of green onions chopped

  • 1.5 lbs lean ground beef

  • 1 medium head of napa cabbage

  • 1/2 tsp crushed red pepper

  • 2 tsp honey

  • 2 tsp sesame seeds

  • 4 tbsp low sodium soy sauce

  • 1 tbsp toasted sesame oil

  • 2 tbsp virgin coconut oil

Directions

  1. Wash and dry the fresh produce.

  2. Add carrots to a large bowl.

  3. Trim off and discard the root end of the cabbage; quarter the cabbage lengthwise, then thinly slice crosswise into shreds and add to the bowl with the carrots.

  4. Trim off and discard the ends of the green onions; cut the onions into 1/4 inch pieces and place in a small bowl.

  5. Preheat a skillet over medium-high heat.

  6. While the skillet heats up, peel and mince the garlic cloves.

  7. In a small bowl, combine and whisk together soy sauce, sesame oil, and honey.

  8. Once the skillet is hot, add coconut oil and swirl to coat the bottom.

  9. Add the garlic and crushed red pepper; cook for about 30 seconds and then add the lean ground beef.

  10. Cook the beef until browned.

  11. Once the beef is cooked, add the carrots and cabbage to the skillet. Cook, stirring continuously, until the cabbage is wilted, about 5 minutes.

  12. Pour the sauce over the stir fry and add about 3/4 of the green onions (save the rest for garnishing); stir and cook for another 1-2 minutes.

  13. To serve, spoon the stir fry into a bowl or on a plate and garnish with green onions and sesame seeds. ENJOY!
