Italian Stuffed Peppers
If you are a busy mom like me you will LOVE this recipe!! So basically I make spaghetti on Sunday night, and make enough sauce to have this for another night in the week!
My sauce recipe:
- Brown 2-3 lbs of lean ground turkey
- Add Italian Seasoning (a lot of it - LOL - sorry I do not measure it out!)
- Add 2 jars of Organic Pasta Sauce (I like the Bertolli Tomato Basil)
- Let the sauce simmer on Med-Low heat for an hour before serving.
How to make the stuffed peppers:
1. Wash the peppers and cut the tops off, make sure the insides are cleaned out.
2. Place the peppers in a pot tall enough to put a lid over.
3. Spoon in chilled sauce.
4. Pour water to fill the pot about 1/3 the way up the side of the peppers.
5. Place the lid on top.
6. Bring water to a boil on Med-High heat.
7. Once water begins to boil reduce heat to low and let them simmer about 10 minutes or until the peppers are tender.
8. Top each pepper with 1 blue container (Portion Fix) of mozzarella cheese.
9. Replace lid long enough for cheese to melt.
10. Serve and enjoy!
